Healthy Chocolate Mousse

This delicious dessert is tasty and healthy being a good source of protein, healthy fats, calcium, potassium, antioxidants, and polyphenols. There aren’t too many desserts that can claim that. So what makes it so healthy? Simple healthy ingredients!


Ingredients
1 cup semi-sweet dark chocolate chips (60% cocoa or higher)
1 cup non-dairy almond or rice milk
1 12.3 ounce Silkin Soft tofu, nonGMO, organic
1 1/2 cup avocado, approximately 3 medium avocados
1 teaspoon vanilla extract
Toppings: Strawberries, Blueberries and Mint

Directions
Place chocolate and almond milk in a microwave safe bowl and heat for 1 minute. Let stand for 2 minutes. Place tofu, avocado, vanilla extract, and chocolate almond milk mixture into a blender and mix for a few minutes making a puree consistency. Spoon into small cups and place in the refrigerator for 2 hours or 30 minutes in the freezer. Top with fruit. Serves 8.
